Ingredients

For the dressing:
½ tsp Dijon mustard
1 tsp honey
Juice and zest of half a lemon
½ tsp finely chopped parsley
2 tablespoons olive oil
The Filling:
Mission carb balance wraps x 2
1 finely sliced spring onion
¼ cucumber, thinly sliced and halved
Handful of salad leaves
200g cooked chicken slices

Step 1
Put all of the dressing ingredients into a medium bowl and whisk to combine the zesty dressing.
Add the spring onion, cucumber, salad and chicken and toss through to coat everything in the dressing.
Fill the centre of each wrap with the chicken mix leaving space at the end.
For a traditional style wrap fold one side over the filling, then fold the bottom up and fold the other side over the top to seal the bottom end of the wrap and hold it in place while you enjoy this quick and healthy meal.
You can drizzle the remaining dressing from the bowl into the top of the wrap if you’d like to but if everything was tossed in the dressing there should be enough flavour without it being too messy!
