Firstly place the peppers and the onions on a baking tray and sprinkle with the crushed garlic, salt and pepper and 2 tbsp of olive oil.
Then on another baking tray layer the sweet potato and sprinkle with the balsamic and olive oil.
Place both in the oven at 200ºC for 20 minutes or until potato is soft.
Then heat the Deli Wraps on a low setting in the microwave for 20 seconds.
Spread them with a thin layer of tomato pesto, then place the rocket in the middle, topped with some peppers, onions and sweet potato, then sprinkle with feta.
Now fold in the bottom of the wraps, then the two sides to form a pocket with the filling peeking out the top.
Serve and enjoy.

1 orange sweet potato, peeled, sliced 5mm thick
½ red pepper, deseeded and cubed
2 tbsp balsamic vinegar
½ yellow pepper, deseeded and cubed
4 tbsp olive oil
½ orange pepper, deseeded and cubed
1 jar sun-dried tomato pesto
1 white onion, sliced
1 bag rocket leaves
1 clove garlic, crushed
1 block of feta cheese
