Red Cabbage Detox Wrap

Method

Prepare all the filling ingredients and mix together in a bowl.

 

Put all the dressing ingredients into another small bowl.  Season and whisk the dressing until slightly thickened.

 

Pour the dressing over the filling ingredients and toss until evenly coated.

 

Split the filling between the wraps and fold up tightly to serve.

150g red cabbage, shredded

1 large carrot, coarsely grated

A handful of parsley, chopped

1 Pink Lady / Cox apple, sliced

1 celery stick, finely sliced

2 tbsps pine nuts, toasted

1 tbsp sunflower seeds

1 tbsp sesame seeds, toasted

2 tbsps raisins (preferably green )

DRESSING:

1 tsp grated root ginger, 1 tbsp clear honey, 1 tbsp lemon juice, 2 tbsps sunflower oil
