Chipotle Pork Burger with Pineapple salsa


Pork Burgers
Hand mix mince, spring onion, chipotle, coriander, lime zest and juice, and season. Divide into 4 balls, flatten into burgers and chill for 15 minutes.

Brush burgers with oil and grill for 5 minutes each side until thoroughly cooked. Top with cheese slice.

Pineapple Salsa
Mix all ingredients together in bowl. Chill until use.

Griddle wraps for 20 seconds each side, fold into triangles to make pocket. Fill with lettuce, burger and salsa.

500g pork mince
6 spring onions, chopped
1 tbsp chipotle paste
Zest of 1 lime
Juice of 1/2 lime
4 tbsp coriander
4 cheese slices

Pineapple Salsa:
175g diced pineapple
1/2 small red onion, chopped
Zest and juice of 1 lime
1 small red chilli (deseeded and chopped)
1 tbsp chopped mint
2 tbsp chopped coriander
