Fry the onion in the oil for about 15 minutes until soft and golden.
Divide the ingredients between two wraps and sprinkle a generous amount of cheese onto one half of a wrap.
Place the ham, chicken, onions and more cheese on top. Add a little coriander and fold the wrap over, to make a half moon shape.
Heat a griddle pan, or heavy frying pan, brushed with oil. Cook the wrap over a medium heat for 1-2 minutes on each side, until golden and crisp.
Cut in half, cool and then wrap in cling film to chill.
This dish is great served with a spoonful of tomato salsa dip.
