Mix the butternut squash and onion with the olive oil and seasoning.
Spread on a large non-stick baking tray and roast for 30 mins in a pre-heated oven at 200C/180C fan/gas 6 until soft and charred at the edges.
Once cool enough to handle, finely chop the roasted red onion
Heat a large non-stick frying pan over a medium heat and add one of the wraps then top with the roasted squash and onion.
Crumble over the goat’s cheese, sprinkle on the sage and top with a second wrap.
Cook for 2 mins until the wrap is golden and the cheese is starting to melt.
Turn the quesadilla over and cook for another 2 mins until hot through. Cut into quarters to serve.
